Tropical Mango, Passion Fruit, Coconut and Madagascan Vanilla Cream Tarts

About the Recipe

The dish that I have chosen is one of my favourites as the final product has a bright colourful tropical look and tastes great! This intense delicious tropical summer tastes remind us all of the fun times when we could all go away and enjoy hot summer holidays before the pandemic locked us all down.



  • 125g plain flour

  • 50g butter

  • a pinch of salt

Cream filling

  • 50g cream cheese

  • 25ml coconut milk

  • 10g icing sugar

  • 1/2 tsp local LittlePod vanilla paste

Fruit layer

  • 1 mango

  • 1 passion fruit

  • 1 lime

  • Black seedless grapes


Mix the flour and salt and cut-in the butter

Use the end of the fingertips to rub-in the butter into the flour until it looks like breadcrumbs

Using the butter knife, stir in 2-3 tsp cold water to bind the dough together   

Wrap the dough in film and chill for 10-15 min

Preheat the oven to 180°C  

Roll out the pastry thinly and place in the tart tins.

Blind bake the tarts for 6 min

Take the tarts out and bake for another 6 min uncovered

Cream Filling
Whip together the cream cheese, coconut milk, icing sugar and vanilla   paste until it looks like yoghurt

Pour into a piping bag and chill until needed

Fruit Layer
Dice the mango

Mix the passion fruit pulp and squeeze in lime juice

To Make

Half fill each pastry cases with cream filling

Top up each tart with the fruit layer

Add thin slices of grapes, and decorations.
