Greek Orange Cake

About the Recipe

I believe the Mediterranean diet is a healthy diet which uses simple, locally produced ingredients. The abundance of sun and good soil results in wonderful ingredients such as olives and tomatoes. Much of the meat is produced by small ethical farmers. Greece produces the best yogurt!

Ingredients

250g ready-made filo pastry


Syrup

  • 3 large juicy oranges (save zest from 1 orange for cream and 2 halves of juiced orange for marmalade)

  • 150g castor sugar

  • 1 tbsp. pure honey

  • 150ml Water

  • Cinnamon stick

Batter

  • 2 large free-range eggs

  • 100g castor sugar

  • 150g Greek yogurt

  • 100ml sunflower oil

  • 1 tsp vanilla essence

  • ½ tsp baking powder

Quick marmalade

  • 2 orange halves (saved from juiced oranges)

  • 150g castor sugar

  • Pinch of ground cinnamon

Orange liqueur whipped cream

  • 100ml double cream

  • 50ml Greek yogurt (thick full fat)

  • Zest of one orange

  • Splash of orange liqueur Grand Marnier

  • 1 tablespoon castor sugar

Preparation

Scrunch filo sheets and bake in oven at 150°C for 20 minutes or until nicely dried out


In the meantime, make syrup by taking juice from 3 oranges


Add water, castor sugar, honey and cinnamon stick


Add 2 orange halves from juiced oranges


Bring to boil and simmer for at least 30mins


Set aside


Batter

Beat eggs and sugar


Add Greek yogurt, vanilla and baking powder and beat again


Slowly add oil to mix while beating


Break cooled filo into flakes and gently mix with batter ensuring all flakes are well covered in batter


Add cooked orange halves to food processor and add 150g castor sugar and a pinch of ground cinnamon


Mix to a pulp in food processor


Stir marmalade mix into filo and batter


Bake for 30 to 35 mins at 170°C


Remove from oven and immediately pour over cooled syrup and allow it to soak into cake


Orange liqueur whipped cream

Whisk double cream, Greek yogurt and castor sugar until thick and creamy stand in firm peaks


Very gently fold in splash of Grand Marnier and orange zest


Set aside in fridge.
