Firm favourites in our household, also loved by those not with us anymore. Memory food.
3 apples, peeled, cored and cut into 8-10 segments per apple
15g Butter, unsalted, melted
15g Caster sugar
1 squeeze Lemon juice
½ tbsp. Calvados (optional)
1 Egg, medium
100ml Whipping cream
Icing sugar, for dusting
Rub together the butter and Flour
Add the whole egg and yolk
Bring the mixture together to form a ball
Knead until uniform but not too much
Flatten in to a circle cover in cling wrap and leave to rest in the fridge
Pre heat the oven and place a heavy baking tray upside down on the shelf
Roll the pastry out between to 2 pieces of cling wrap
and line the tart tins
Overlap the apple segments close together in the tart case.
Mix together the melted butter, sugar and lemon juice Calvados and brush over the apples.
Cook for 20 mins
Mix together the egg, sugar and whipping cream
Cook for an additional 10 mins.
