Sofia's Winning Roasted Butternut Squash and Ricotta Ravioli


For the pasta dough:

  • 50g 00 flour

  • 50g semolina flour

  • 1 large egg

For the filling:

  • 125g ricotta

  • 150g roasted butternut squash

  • Nutmeg

  • cinnamon

  • Salt and pepper to taste

For the sauce:

  • 50g unsalted butter

  • Few sage leaves

To garnish

  • Roasted mixed nuts

  • Roasted macadamia

  • Rocket

  • Parmesan shavings


Prepare your pasta dough and let it rest whilst preparing the filling. Once the dough is rested, fill and shape and set aside. Burn your butter and keep aside, once the pasta is cooked, serve toasted lightly in the butter sauce, sprinkle with the garnish, and ready to enjoy.
