Chicken Kiev with Wild Mushroom & Red Wine Sauce

Ingredients

soft cream cheese

grated parmezan

2 pieces of brown bread

2 eggs plain flour

arborio rice

1 chicken breast

salted butter

3 garlic cloves

veal stock

mushroom stock

merlot

1 banana

Method
-
Finely dice 2 garlic cloves and add to the butter (mix)

Make incision through chicken breast around half way though pipe the garlic butter into the chicken breast

Flour, egg, breadcrumb, the chicken making sure to cover every inch of the chicken breast

Finely dice a garlic clove, onion and wild mushroom, sweat off in pan
-
Add the arborio rice and cover with stock (constantly stirring, making sure it doesn't stick to the pan)

Heat oil, then place the chicken breast in the hot oil for 2 minutes
-
After 2 minutes remove from oil and place on a tray and put in oven for ten minutes

100ml of red wine, 100ml of chicken stock add thyme, garlic then reduce.
